You are expecting some descent weather in Helsingborg, Sweden for making ice and pretty low temperatures specifically on on the 23rd, 24,th and 25th of January.
You should follow the weather and if it continues to be as planned: I would use regular tap water nightly (a little at a time) up until the 22nd of January. I would add significantly more water on the 23rd and 24th. To give it a nice finish, I would flood with a think layer of warm water on the 25th.
